Fun times with friends

This morning, I didn’t have time to eat breakfast because I had volunteered to work in my church’s nursery so by the time lunch came around I was super hungry. All I had for breakfast was a cup of coffee from Starbucks.

We had a nice surprise and were invited to lunch with Kyle’s parents. They took us to Mimi’s Café. I always love going to Mimi’s, I’ve never had anything there I didn’t like. We started out with a hummus sampler platter.

I think it was regular and sun dried tomato hummus.
I ordered the Mimi’s Cobb Salad

Kyle and I spent the afternoon cleaning the house because I had some good friends come over for dinner. I was excited to see them because we don’t get together very often. We had planned to do this last weekend but because of the snow we rescheduled for this week.
Mexican night!
I made my Dziadzia’s salsa recipe. (Dziadzia means Grandpa in Polish)
Salsa Polska
Finely chop all ingredients to size of a pencil eraser except where noted.
½ Cup onions (Vidalia Preferred)
2 Green Onions
3 Fresh tomatoes
3 Cups canned whole tomatoes
1 ½ cups tomato sauce
1 T Chili Powder
¼ t Ground cumin seed
¼ t oregano
¼ t ground black pepper
½ t Cilantro
1 Slice of Jalapeno pepper*
1 Clove garlic*
*Mince the jalapeno and garlic.
Salt to taste
I also made some grilled chicken seasoned with cayenne pepper, salt, and garlic. A couple of the girls were on special diets so I wanted to just grill up some chicken and have Mexican toppings so they can fix it however they wanted.



The toppings were
Sliced avocado
Sour cream
Salsa
Cheese
I also fixed black beans and Mexican rice.

We had a great time catching up as you can tell...

    What great ideas!! I've been reading your blog now since Kyle's mom recommended it to all of us. (I am a member of the famous Cybers :).
    How great that a healthy diet and good choices are so important to you. My daughter is the same way and since we've been living at their home for awhile, it's beginning to rub off on me. Just goes to show that it's never too late to change, and you CAN teach an old dog new tricks! :)

    Thanks so much for reading! That's great that your daughter loves to eat healthy. I love cooking and helping people realize that healthy food CAN taste good. ;) Maybe your daugher and I can exchange recipes some time!

Soba Lo Mein

Is everyone ready for all the snow they say we are going to get tomorrow?  I hope this is the last of it. I’m ready for Spring! Flowers, bike riding, and walks in the park! I love Almond Butter

Hello again! It’s been a busy day for me today but it’s been a good food day. ;) The blender worked out a little better for me this morning. I guess it just needed a little using before I got used to it. I started today with an Energy Smoothie. It was really good. It was my first time trying the spice Cardamom. Energy Smoothie ½ C Almond Butter 1 Teaspoon Ground Cardamom 1 ½ C water 1 C Frozen Peaches 1 to 2 Teaspoons of Agave ½ C Ice I cut this recipe in half. The Cardamom was pretty noticeable. It’s hard to describe but it was a little like cinnamon. I loved the Almond butter. I tried a new brand this time. It was very creaming right out of the refrigerator. I drank most of the smoothie on my way to work. I was pretty hungry when I woke up this morning.  Lacey enjoyed the Mango Smoothe today. Isn't she cute! I had a cup of hot green tea about 8:30. Chili For a Chilly Day

Burrrr it’s cold tonight! It seems like I was cold all day until I had a warm bowl of chili. Nothing can warm you up better! We had more snow today! I can’t believe all this snow that we’ve been getting. I love how pretty it is but I don’t like how everything just shuts down. I went to the grocery store this afternoon and it was a nightmare. I got all the things I needed and stood in line for about 10 min until realized that the hamburger meat I had in my buggy had a big tear in it. I had to go get another one and get in the back of the line. I just read about all the magazines they had standing in line. Did you know that Charlie Sheen is in rehab?And Justin Beiber is taking over the world?  This is not any kind of special recipe. It's the chili recipe I grew up on. It starts with a chili seasoning packet and its never the same every time I make it. Start by browning your meat. Try to get very lean meat so you don’t’ have to drain it.
