My Mouth is On Fire

My mouth is on fire right now from the Southwestern Chicken and White Bean soup I just ate!

This morning was a smoothie day. I made a chocolate strawberry smoothie.

Frozen strawberries + tsp Cocoa powder + 1 cup vanilla coconut milk + drizzle of agave

Lunch was a homemade refried been burrito.

Last night I soaked some pinto beans in water for about an hour and a half. I then drained them then added 1/2 veggie broth and 1/2 water to the beans and simmered for an hour and a half. About 20 min before they were done I put in some chopped onion to add flavor. Once the beans are done I smashed them to make refried beans! If you like a little spice you could of added some chopped jalapeno or chili powder.

The burrito was so good but it didn’t keep me full. I had some cantaloupe and cherries after lunch.

I also had a cup of Tazo tea.

Dinner was Southwestern Chicken and White Bean Soup. Boy did this clear my sinuses!

2 Cups shredded cooked chicken breast (I used a rotisserie chicken from Kroger)

1 Tablespoon taco seasoning

2 (14 oz) cans fat- free, less sodium chicken broth

1 (16 oz) can white beans, rinsed and drained

1/2 Cup green salsa

Greek yogurt

Fresh chopped cilantro

1. Combine chicken and taco seasoning. Toss well to coat. Heat large saucepan over medium heat. Coat with cooking spray. Add chicken and sauté 2 min or until lightly brown. Add broth.

2. Place beans in a small bowl, mash until only a few whole beans remain. Add beans and salsa to pan, stirring well. Bring to boil. Reduce heat to simmer for 10 min. Serve with greek yogurt and cilantro if desired.

This soup was really quick and easy to make. Like I said it was spicy to me but I’m kind of a weeny when it comes to hot foods. The flavor is soo good and I will be adding this recipe to the recipe book.

To keep me from going to get frozen yogurt I had a POMtini (POM juice+ carbonated water) to curb my sweet craving. It always hits the spot! I love POM juice.

So, as you know this is my last week of daily blogging. I’ve just about made it a full month on the 28day detox. The first week was really the detox and the remainder was to stay away from process foods and to eat as healthy as possible. I did cave on some sweets but overall I feel I did pretty good. I eat pretty healthy already but I like to enjoy a little dessert here and there. If you’ve been a faithful reader you should know that sweets are my weakness.

Day 1–Have a Headache Already

Happy New Year to everyone! Day 1 of the detox started today. It’s been pretty tough,I’m not gonna lie. Vanilla Bean Almond Butter

I don’t know about you but I LOVE nut butters. I have never made my own because I didn’t realize out easy it was. I’m telling ya, everyone can make nut butter as long as you have a decent food processor and there's not turning back. I’ve had some left over vanilla beans from the vanilla I made a while back and wanted to use them, so I decided to use them in the almond butter. I made this about a week ago and it’s already half gone! It’s like a yummy creamy dessert. Once you try fresh pure nut butters you will never go back to store bought. Only 3 ingredients and no added oils! So here it goes: Start out by toasting your almonds until they start to smell yummy. Pour your almonds in the food processer and start to process. You will need to process for 8 to 10 minutes and stop several times to scrape down the sides, so be patient. 2011 AR Cornbread Festival

Saturday was the 2011 Arkansas Cornbread Festival in Little Rock. I entered the competition thinking it would be a fun activity to participate in; I had no idea how big of a festival it was going to be. The number of attendents kept increasing which made me more nervous as the competition neared.  The last count I had heard was 1000 people and  I thought, how am I’m going to fix enough cornbread for that many people?  I knew that they would only be getting a 2 oz sample cup but still, that's a lot of people. I spent Friday afternoon and evening baking cornbread. They suggested that we make 4 13x9 in square inch pans worth of cornbread, I ended up shooting for 5 just to be safe.  My cornbread was called Citrus Corny Cornbread.
