Day 21- We Made It

We made it! It’s been a long hard journey but worth it. Check out my last day of the detox. Breakfast was at The Root Café! Kyle and I love having breakfast here. We normally either have the breakfast casserole or egg and cheese biscuit. But today we choose the egg and toast. It was two local eggs over medium with a toasted piece of gluten free bread (from Dempsey Bakery) with muscadine preserves. I love everything about The Root Café! Lunch was enjoyed with my mom and sis at Zaza’s. We went to Conway today to go to an antique show. We had a lot of fun shopping and I even bought a Percolator for my camping gear! I gotta have my fresh coffee while camping! I chose a salad with egg, avocado, tomatoes. and spinach. I also had a bowl of black bean soup. It was all really good. Kyle sent me a picture of what he had for lunch. It’s a gluten free crust with soy cheese. He said it was actually good! Day 20- I lost 4 Pounds!

I can’t believe tomorrow will be the last day of the detox! I’m not going to say that it’s gone by fast because it sure has not. My goal coming out of this is to continue to eat smaller portions and make good choices. I love to eat healthy but I also love my chocolate cookies and Mexican food. I can still eat those things in moderation. I would like to keep the 4 pounds off that I lost. Kyle has lost a total of 8 pounds! I’m so proud of him for sticking to it. I really didn’t think he had it in him. I think he is surprised that he made it as well. My breakfast this morning was warm and creamy oats topped with mixed berries. Lunch was roasted veggies again. My favorite roasted vegetable is broccoli. I love how the stems get a little crunchy. Dinner tonight was lemon pepper catfish with rice and shitake mushrooms. It was not one of my favorite meals. The catfish was seasoned just a little too much (I got it from the butcher at Kroger) and the shitake mushrooms were dehydrate. I’...

Day 19- Pizza!

This morning was scrambled eggs and a banana. Have I mentioned how much I love working from home so I can have breakfast like this? I’ve only been working from home for about a month and am loving it. Lunch was roasted vegetables; cauliflower, broccoli, and sweet potatoes with sparking POM juice. Dinner was at American Pie for trivia night! We were able to order pizza. I had been looking forward to it all day. This is not your typical pizza. It’s gluten free crust with olive oil, garlic, mushrooms. olives, tomatoes, onions, and peppers. No cheese or sauce. The crust was thin and crispy. I love crispy crust. It was good but I sure did miss the cheese. It just wasn’t the same. Kyle did good and ordered a similar pizza. I didn’t eat all of this, I had a couple pieces leftover. We won 2nd place tonight by the way! Go In Vino Veritas!

Day 18- 3 More Days To Go

This morning was another OJ and oatmeal day. It was so yummy. It was a repeat from yesterday; oats, almond milk, banana, cinnamon, chia seeds, and mixed berries. Lunch was leftovers from dinner last night. The chickpea patty was a little dry the next day. I think it would have been better if I sautéed it again in the skillet to make it crispy again. I also had a side of cucumbers. Dinner was thrown together really quick. I used brown rice noodles and made shrimp pasta with spinach and cherry tomatoes. I seasoned it with olive oil and Italian seasoning. Kyle made some kale chips. He has gotten really good at perfecting them! For dessert I put some frozen peaches, almond milk and oats in the oven. It was tasty but would have been better with a little brown sugar.

Day 17- Chickpea-Brown Rice Patties

Hi again! Today was a really good day. I’m loving the break from smoothies every morning. This morning I whipped up some yummy oatmeal without using any type of sugar or butter. I boiled the oats in almond milk and a ripe banana I had in the freezer. I also added chia seeds and cinnamon. It was topped with fruit! I didn’t miss the usual brown sugar or peanut butter that I usually put on my oatmeal. Lunch was leftover beans and rice. Surprise surprise! I think this is the last of it. Dinner was really good. I made the chickpea brown rice patties that they put in the week 3 recipes for the detox. The patties are made up of chickpeas, brown rice, garlic, and parsley I really enjoyed them! Dessert was broiled grapefruit! I saw this on Pinterest and love this new way to eat grapefruit! I did not end up using this fork. It didn’t work so well so I went for a spoon. Have a good night!

Day 16- What A Breeze!

Today was a breeze! I love days like that. I started out my morning with two scrabbled eggs and 1/2 an apple. This kept me full this lunch. I had leftover beans and rice and the rest of my apple. I’m going to be eating beans for a while. Dinner was tilapia that was stuffed with seafood. I picked this up at the meat department at Kroger. I had a side of kale chips and more beans and rice. I am full and satisfied and I’m now ready to relax! Have a good night!

Day 15- 1 More Week To Go

One week from today I can eat whatever I want to eat! It seems like I’ve been on this detox for a long time but it’s only been 2 weeks. Looking back over the past 2 weeks it’s been a struggle but I’m so glad I’ve done it. It proves to myself that I can be disciplined and control the types of foods I put in my body. Today has been a good one. I have officially decided that I’m going back to Russia! I’m so excited but also a little scared. I have a lot of money to raise but I know God will provide. I get so excited when I think about how I get to go see those kids again who I love so much! This morning before church I made 2 eggs with a side of fruit and 100% OJ. It was nice to have something other than a smoothie for breakfast. Lunch had to be quick because Kyle and I had kickball practice this afternoon. So I warmed up a bowl of organic/gluten free black bean soup and had a couple of cracker chips from Dempsey Bakery.  I found the soup at Kroger and I wasn’t too impressed. ...

Day 14- Saturday With My Baby

It’s been a fun Saturday. Kyle and I started out the day with no plans at all and ended up with a full day of fun. I started out the morning with a smoothie, figure that. Since I can have oats I made a peaches and cream smoothie. I put peaches, banana, oats, and almond milk. It tasted just like peaches and cream oatmeal. Kyle and I started the morning out by stopping by a friends yard sale to say HI! Then we went shopping a little and ended up downtown. We decided to go to Dempsey Bakery for lunch since they are an all gluten free bakery! Kyle and I both got the grilled portabella sandwich with no cheese. It had grilled peppers, tomatoes, and lettuce on their homemade bread. We had to ask for an alternative side since they were serving chips that we couldn’t eat. Good thing they had an alternative. Beanitos! I had never had them but they were pretty darn good. They were made with no potatoes and all black beans. We enjoyed every bite. The only hard part was seeing all the yummy...

Day 13- Night Out On the Town

I love Fridays! I woke up this morning excited that it was Friday and the weekend was about here. I also knew I was going to spend the evening with some good friends at PF Chang’s. I was due to go to the grocery store so breakfast and lunch were thrown together on a whelm. I repeated the smoothie I had yesterday since I had another orange left. I put 1 orange and 1 cup of frozen mangos with a splash of water and a splash of almond milk.. Again, I LOVED all the pulp Lunch was tuna on celery with a side of bananas and strawberries. It ended up being a pretty good thrown together lunch! I was so looking forward to dinner tonight. I had already decided that I was going to get brown fried rice with shrimp. I’m a day early on the rice but I convinced myself that a day early wasn’t too bad. I planned on eating half and taking the rest home for dinner tomorrow night.
