Chicken Tetrazzini

Hello fellow Keep if Fun and Healthy friends. I hope your cooking has been delish!

It’s been a few days since I’ve been on here and I’ve missed it. Now that the 28day challenge is over I’m still going to update you on my fun and healthy recipes. I can’t leave you hanging.

I made Chicken  Tetrazzini! I’ve never made it before but I always love yummy creamy pasta. I took the recipe and made some healthy adjustments.

Start by sautéing your veggies

Add your cooking wine. This part smells so good!

Gradually add your remaining ingredients. Flour and cheeses.

Make your bread crumbs. Kyle did this part. He was proud of his bread crumbs.

Assemble it all together and bake.

I would strongly recommend cutting this recipe in half. It made a ton and I don’t know how I’m going to eat it all.

  • Cooking spray
  • 1  cup  finely chopped onion
  • 2/3  cup  finely chopped celery
  • 1  teaspoon  freshly ground black pepper
  • 3/4  teaspoon  salt
  • 3  (8-ounce) sliced mushrooms
  • 1/2  cup  dry sherry
  • 2/3  cup  all-purpose flour
  • 3  (14.5-ounce) cans fat-free, less-sodium chicken broth
  • 2 1/4  cups  (9 ounces) grated fresh Parmesan cheese, divided
  • 1/2  cup  (4 ounces) 1/3-less-fat cream cheese
  • 7  cups  hot cooked vermicelli (about 1 pound uncooked pasta)
  • 4  cups  chopped cooked chicken breast (about 1 1/2 pounds)
  • 1  (1-ounce) slice white bread

Preheat oven to 350°.

Spray stockpot with cooking spray over medium-high heat. Add onion, celery, pepper, salt, and mushrooms; sauté 4 minutes or until mushrooms are tender. Add sherry; cook 1 minute.

Gradually add flour to pan; cook 3 minutes, stirring constantly (mixture will be thick) with a whisk. Gradually add broth, stirring constantly. Bring to a boil. Reduce heat; simmer 5 minutes, stirring frequently. Remove from heat.

Add 1 3/4 cups Parmesan cheese and cream cheese, stirring with a whisk until cream cheese melts. Add the pasta and chicken, and stir until blended.

Place bread in food processor; pulse 10 times or until coarse crumbs form. Combine breadcrumbs and 1/2 cup Parmesan cheese; sprinkle evenly over pasta mixture.

Bake at 350° for 30 minutes or until lightly browned. Remove casserole from oven; let stand 15 minutes.

Kyle and I loved it. It was served with a fresh side salad.

My blog is now posted on If you search by location and look at Arkansas you will see it. They misspelled my name but I hope they will be fixing that soon. It happens a lot. 'Winking smile

Ready For The Weekend

Yesterday was a fun day! Thanks for coming by yesterday for the Giveaway. CONGRATS to Lacey for being the first to comment only after 8 min. She’s fast!

I hope you’ve had a great day. I’m ready for the weekend and I’m happy tomorrow is Friday!

Breakfast was another bowl of Kashi cereal and a blueberry scone.

Lunch today was leftover Southwestern White bean soup and a side salad with honey mustard dressing.

I picked up this lettuce the other day at Whole Foods. Its grown right here in Arkansas. It taste so fresh! Can’t forget the dab of greek yogurt in the soup! It calms the spiciness down for me.

I didn’t have any snacks today because I never got hungry for one. Guess this lunch was pretty filling.

Dinner was leftover rotisserie chicken with a baked sweet potato with a side of green peas.

I’ve been running outside for the past couple of nights since the weather has been so nice. I’m not so sure it was the best idea because I’m starting to feel a little sick. I hope I don’t get sick!

Happy Giveaway Day! I’m so excited about today. I hope you are as excited as I am.

This morning was a bowl of cereal with a cup of coffee. I had a surprise on my desk when I came in for work. Thanks Lacey for the yummy bread from Harrison. I may have eaten a slice of bread as well. ;)

Look how crunchy it is!

For lunch I had a leftover refried bean burrito with a side of Food Should Taste Good sweet potato chips. I am soo hooked on these chips right now.

My tortilla broke in half so I made 2 small burritos!

One of the health coaches that I work with was leaving today. Today was her last day. So I picked up some freshly made blueberry scones from Whole Foods for a little treat for the office. They were pretty dang good. They had fresh blueberries in them!

This is a horrible picture but it was soo good!

I also had some grapes!

Dinner tonight was just as hot as last night. I know I’m a weeny when it comes to spicy foods but I think even Kyle would think it was pretty hot!

I had a hot bowl of Southwestern White Bean Soup with a dab of greek yogurt. Served with a side salad dressed with squash + zucchini+ pine nuts + parm with honey mustard dressing.

Giveaway question:

My Mouth is On Fire

My mouth is on fire right now from the Southwestern Chicken and White Bean soup I just ate!

Tomorrow night is the big night for the GIVEAWAY! Keep reading to find out how YOU could win a Whole Foods give card.

This morning was a smoothie day. I made a chocolate strawberry smoothie.

Frozen strawberries + tsp Cocoa powder + 1 cup vanilla coconut milk + drizzle of agave

Lunch was a homemade refried been burrito.

Last night I soaked some pinto beans in water for about an hour and a half. I then drained them then added 1/2 veggie broth and 1/2 water to the beans and simmered for an hour and a half. About 20 min before they were done I put in some chopped onion to add flavor. Once the beans are done I smashed them to make refried beans! If you like a little spice you could of added some chopped jalapeno or chili powder.

The burrito was so good but it didn’t keep me full. I had some cantaloupe and cherries after lunch.

I also had a cup of Tazo tea.

Dinner was Southwestern Chicken and White Bean Soup. Boy did this clear my sinuses!

2 Cups shredded cooked chicken breast (I used a rotisserie chicken from Kroger)

1 Tablespoon taco seasoning

2 (14 oz) cans fat- free, less sodium chicken broth

1 (16 oz) can white beans, rinsed and drained

1/2 Cup green salsa

Greek yogurt

Fresh chopped cilantro

1. Combine chicken and taco seasoning. Toss well to coat. Heat large saucepan over medium heat. Coat with cooking spray. Add chicken and sauté 2 min or until lightly brown. Add broth.

2. Place beans in a small bowl, mash until only a few whole beans remain. Add beans and salsa to pan, stirring well. Bring to boil. Reduce heat to simmer for 10 min. Serve with greek yogurt and cilantro if desired.

This soup was really quick and easy to make. Like I said it was spicy to me but I’m kind of a weeny when it comes to hot foods. The flavor is soo good and I will be adding this recipe to the recipe book.

To keep me from going to get frozen yogurt I had a POMtini (POM juice+ carbonated water) to curb my sweet craving. It always hits the spot! I love POM juice.

So, as you know this is my last week of daily blogging. I’ve just about made it a full month on the 28day detox. The first week was really the detox and the remainder was to stay away from process foods and to eat as healthy as possible. I did cave on some sweets but overall I feel I did pretty good. I eat pretty healthy already but I like to enjoy a little dessert here and there. If you’ve been a faithful reader you should know that sweets are my weakness.

Tomorrow at 8pm CST I will be posting a question at the end of the blog. The first person to answer it correctly by commenting on the blog or on the facebook post will win a $15 Whole Foods gift card. The question will have to do with my previous posts.

Good luck everyone!

What Do You Like in Your Tortilla?

Happy Monday! I don’t know about you but I’m happy it’s over. Mondays are always tough.

Breakfast was lazy. I knew I was going to have lots of work to do once I got to work and didn’t want to waste time making breakfast so I stopped at…..

You guessed it, Starbucks!

It was good. I put the packet of brown sugar in here with half of the nuts and half of the dried fruit. I ate the other half for a morning snack before lunch.

Lunch starts my tortilla trend.

I made a veggie wrap with squash, zucchini, and red pepper hummus. I have to say it wasn’t the best I’ve had. I think it would have been a little better with some sprouts.

I’m growing another little patch of sprouts in the kitchen right now. They should be ready by the weekend!

Lunch was served with a side of Food Should Taste Good sweet potato chips and homemade salsa.

Snack today was a ruby red grapefruit!!

I was ready for this snack today!

Dinner was a breakfast burrito. Whole wheat tortilla with scrambled egg, salsa, and cheese with a side of cantaloupe!. I had 2 of these burritos.

After dinner Kirby talked me in to going to the Dreamy Spoon. It didn’t take much! Winking smile

I had all natural strawberry, pomegranate, and vanilla with fresh fruit. I still love the pomegranate the best!

I’m cooking something on the stove tonight for another tortilla meal for lunch tomorrow. Come back tomorrow to see what it is!

Momma's Home Cooked Meal

Aaaahhh Sunday evening. The feeling of trying to get in every last bit of the weekend in and getting ready for the work week coming up. You gotta love and hate them.

Today I won $7 at the race track!! That’s good for me. ;)  I had a great day with my mom sis and my brother in law!

Breakfast started out with a bowl of Kashi cereal.

This was a new kind. It was Honey Almond Flax. I really liked the crunch!

Lunch was a home cooked meal from my momma’s house!

She made Corn beef, potatoes, carrots, salad, and a side of garlic bread.

She also had this:

It was good but I don’t think it was worth it. It was a strawberry cake with cream cheese frosting from Wal-Mart bakery. I had a small slice.

We went to the race track after lunch and I had a glass of wine and a few handfuls of Jamie’s popcorn.

Dinner was leftover soup! I think it was just as good if not better 2 days later!

Happy weekend everybody! I hope it’s been a good one so far.

3/4 Cup Sugar or 2 tbs or agave syrup

1/2 Cup butter, softened

1 Tsp vanilla

1 Egg

2 Cups whole wheat flour

1 Tsp baking soda

1/4 Tsp salt

3/4 Cup miniature semisweet chocolate chips

1. Heat oven 375 degrees. In large bowl , beat sugars, butter, oil, vanilla, and egg with electric mixer on low. Beat in flour, baking soda and salt until well blended , stir in chocolate.

2. On greased cookie sheet , drop dough by rounded tablespoon about 2 inches apart.

3. Bake 7 to 9 min or until very light golden brown.

I saved a few for me and sent the rest with Kyle. He said they were a big hit!

This morning I decided to just have a smoothie because I had plans to go out to eat for lunch and dinner with friends.

I had a strawberry electrolyte smoothie!

Frozen strawberries + Coconut water + Coconut vanilla milk + almond butter + Kale

Lunch was spent with my friend Lacey!

We went to Somethings Brewing in Conway. This brought back so many memories from college. The meal was so good but ended having just a little too much sugar. They brought out my meal but never brought out Lacey’s meal. We waited and waited and she finally decided to remind them. They apologized and said it was coming out. They ended up giving her meal to her for free and brought out a huge piece of orange yummy goodness cake ( I made this name up. I don’t know what it was called )! Oh my, this was so good! I had just a few bites but it was so rich.

I had a chicken salad sandwich on whole wheat bread with a side of chili. The chili ended up be huge!

I also ordered a strawberry mocha! It was soooo good but soooo sweet.

Tonight I had dinner with another friend. We went to The House! I always loving going to this place. I ordered something different. I got the Spinach and Chevre Salad.  It had baby spinach, sliced strawberries, marinated onions, almond crusted chevre, croutons, and fresh raspberry-red wine vinaigrette. Yum! It was a great light dinner since I had such a large lunch.
