Chicken Tetrazzini

Hello fellow Keep if Fun and Healthy friends. I hope your cooking has been delish! It’s been a few days since I’ve been on here and I’ve missed it. Now that the 28day challenge is over I’m still going to update you on my fun and healthy recipes. I can’t leave you hanging. I made Chicken  Tetrazzini! I’ve never made it before but I always love yummy creamy pasta. I took the recipe and made some healthy adjustments.   Start by sautéing your veggies Add your cooking wine. This part smells so good! Gradually add your remaining ingredients. Flour and cheeses. Make your bread crumbs. Kyle did this part. He was proud of his bread crumbs. Assemble it all together and bake. I would strongly recommend cutting this recipe in half. It made a ton and I don’t know how I’m going to eat it all. Ready For The Weekend

Yesterday was a fun day! Thanks for coming by yesterday for the Giveaway. CONGRATS to Lacey for being the first to comment only after 8 min. She’s fast!   I hope you’ve had a great day. I’m ready for the weekend and I’m happy tomorrow is Friday! Breakfast was another bowl of Kashi cereal and a blueberry scone. Lunch today was leftover Southwestern White bean soup and a side salad with honey mustard dressing. I picked up this lettuce the other day at Whole Foods. Its grown right here in Arkansas. It taste so fresh! Can’t forget the dab of greek yogurt in the soup! It calms the spiciness down for me. I didn’t have any snacks today because I never got hungry for one. Guess this lunch was pretty filling.   Dinner was leftover rotisserie chicken with a baked sweet potato with a side of green peas.   I’ve been running outside for the past couple of nights since the weather has been so nice. GIVEAWAY Day!

Happy Giveaway Day! I’m so excited about today. I hope you are as excited as I am. This morning was a bowl of cereal with a cup of coffee. I had a surprise on my desk when I came in for work. Thanks Lacey for the yummy bread from Harrison. I may have eaten a slice of bread as well. ;) Look how crunchy it is! For lunch I had a leftover refried bean burrito with a side of Food Should Taste Good sweet potato chips. I am soo hooked on these chips right now. My tortilla broke in half so I made 2 small burritos! One of the health coaches that I work with was leaving today. Today was her last day. So I picked up some freshly made blueberry scones from Whole Foods for a little treat for the office. They were pretty dang good. They had fresh blueberries in them! This is a horrible picture but it was soo good! I also had some grapes! Dinner tonight was just as hot as last night. I know I’m a weeny when it comes to spicy foods but I think even Kyle would think it was pretty hot! I ha

My Mouth is On Fire

My mouth is on fire right now from the Southwestern Chicken and White Bean soup I just ate! Tomorrow night is the big night for the GIVEAWAY! Keep reading to find out how YOU could win a Whole Foods give card. This morning was a smoothie day. I made a chocolate strawberry smoothie. Frozen strawberries + tsp Cocoa powder + 1 cup vanilla coconut milk + drizzle of agave   Lunch was a homemade refried been burrito. Last night I soaked some pinto beans in water for about an hour and a half. I then drained them then added 1/2 veggie broth and 1/2 water to the beans and simmered for an hour and a half. About 20 min before they were done I put in some chopped onion to add flavor. Once the beans are done I smashed them to make refried beans! If you like a little spice you could of added some chopped jalapeno or chili powder. The burrito was so good but it didn’t keep me full. I had some cantaloupe and cherries after lunch. What Do You Like in Your Tortilla?

Happy Monday! I don’t know about you but I’m happy it’s over. Mondays are always tough.   Breakfast was lazy. I knew I was going to have lots of work to do once I got to work and didn’t want to waste time making breakfast so I stopped at….. You guessed it, Starbucks! It was good. I put the packet of brown sugar in here with half of the nuts and half of the dried fruit. I ate the other half for a morning snack before lunch. Lunch starts my tortilla trend. I made a veggie wrap with squash, zucchini, and red pepper hummus. I have to say it wasn’t the best I’ve had. I think it would have been a little better with some sprouts.   I’m growing another little patch of sprouts in the kitchen right now. They should be ready by the weekend! Lunch was served with a side of Food Should Taste Good sweet potato chips and homemade salsa . Snack today was a ruby red grapefruit!! I was ready for this snack today! Momma's Home Cooked Meal

Aaaahhh Sunday evening. The feeling of trying to get in every last bit of the weekend in and getting ready for the work week coming up. You gotta love and hate them. Today I won $7 at the race track!! That’s good for me. ;)  I had a great day with my mom sis and my brother in law! Breakfast started out with a bowl of Kashi cereal. This was a new kind. It was Honey Almond Flax. I really liked the crunch! Lunch was a home cooked meal from my momma’s house! She made Corn beef, potatoes, carrots, salad, and a side of garlic bread. She also had this: It was good but I don’t think it was worth it. It was a strawberry cake with cream cheese frosting from Wal-Mart bakery. I had a small slice. We went to the race track after lunch and I had a glass of wine and a few handfuls of Jamie’s popcorn. Dinner was leftover soup! I think it was just as good if not better 2 days later!

Road Trip Goodies

Happy weekend everybody! I hope it’s been a good one so far. I’ve had a great Saturday with good friends. Remember how I said I was going to share with you what I made for Kyle and the boys on his road trip? Well here it is: Healthified Chocolate Chip Cookies 3/4 Cup Sugar or 2 tbs or agave syrup 3/4 Cup packed brown sugar 1/2 Cup butter, softened 1/2 Cup canola oil 1 Tsp vanilla 1 Egg 2 Cups whole wheat flour 1 Tsp baking soda 1/4 Tsp salt 3/4 Cup miniature semisweet chocolate chips 1. Heat oven 375 degrees. In large bowl , beat sugars, butter, oil, vanilla, and egg with electric mixer on low. Beat in flour, baking soda and salt until well blended , stir in chocolate. 2. On greased cookie sheet , drop dough by rounded tablespoon about 2 inches apart. 3. Bake 7 to 9 min or until very light golden brown. I saved a few for me and sent the rest with Kyle. He said they were a big hit! This morning I decided to just have a smoothie because I had plans to go out to eat f
