Pumpkin Seed Crusted Tilapia

I bought some pumpkin seeds last week to put on my salad and I wanted to find another way to use them.

I saw a recipe for using pumpkin seeds on tilapia this week and thought it sounded so good. And it was! I think this is my new favorite tilapia recipe.

Tilapia is a very mild fish, that’s why I love it so much. It cooks really fast and it contains Omega-3 which is good for your heart!

Pumpkin Seed Crusted Tilapia

2 Tablespoon Pumpkin seeds (I used salted but unsalted will work just fine)

2 clove Garlic ( or one large clove)

Olive oil

3 tilapia filets

1. Preheat oven to 375. Crush garlic with knife. Place seeds, bread crumbs, parsley, and garlic in food processer and pulse a few times.

2. Bush both sides of tilapia with olive oil.

3. Sprinkle crust mix on both sides of tilapia and bake for 15min

  2. Mona,

Kyles' mom told me that you had posted about this recipe. It sounds WONDERFUL!! We have one pumpkin left from Halloween that we didn't carve so SOMEBODY (not me-I suspect grandpa and Kasey) will have the happy task of gathering the seeds. Kasey and I will salt and bake them, and then everybody will get to enjoy the Tilapia. We LOVE Tilapia.
Thanks for all your yummy ideas.
    Blessings,
    Sue

Day 1–Have a Headache Already

Happy New Year to everyone! Day 1 of the detox started today. It’s been pretty tough,I’m not gonna lie. I went to Whole Foods and Walmart yesterday to get all the fruits and vegetables I needed for the week. I’ve had a headache all day due to the lack of caffeine. I really don’t drink but maybe a cup and a half of coffee and a glass of tea a day. But I sure did miss it today. This morning I got up to help in the nursery at church. I made the Antioxidant smoothie. You can find the recipe here . It was really good, a little tart but not bad. When I got to the church I got a cup of unsweetened green tea (no caffeine) so I could convince myself it was a cup of coffee. The tea and smoothie held me over till about 11:30. I made a nice little salad for lunch with water with of couple apples thrown in. My salad had spinach, avocado, cucumbers, carrots, cherry tomatoes, and pumpkin seeds dressed with balsamic vinaigrette I did get pretty hungry this afternoon so I made the roasted chi...

I love Almond Butter

Hello again! It’s been a busy day for me today but it’s been a good food day. ;) The blender worked out a little better for me this morning. I guess it just needed a little using before I got used to it. I started today with an Energy Smoothie. It was really good. It was my first time trying the spice Cardamom. Energy Smoothie ½ C Almond Butter 1 Teaspoon Ground Cardamom 1 ½ C water 1 C Frozen Peaches 1 to 2 Teaspoons of Agave ½ C Ice I cut this recipe in half. The Cardamom was pretty noticeable. It’s hard to describe but it was a little like cinnamon. I loved the Almond butter. I tried a new brand this time. It was very creaming right out of the refrigerator. I drank most of the smoothie on my way to work. I was pretty hungry when I woke up this morning.  Lacey enjoyed the Mango Smoothe today. Isn't she cute! I had a cup of hot green tea about 8:30. It hit the spot! The smoothie held me over till about 11. When lunch time came around I was hungry. I had to take a quick lunch...

Vanilla Bean Almond Butter

I don’t know about you but I LOVE nut butters. I have never made my own because I didn’t realize out easy it was. I’m telling ya, everyone can make nut butter as long as you have a decent food processor and there's not turning back. I’ve had some left over vanilla beans from the vanilla I made a while back and wanted to use them, so I decided to use them in the almond butter. I made this about a week ago and it’s already half gone! It’s like a yummy creamy dessert. Once you try fresh pure nut butters you will never go back to store bought. Only 3 ingredients and no added oils! So here it goes: Start out by toasting your almonds until they start to smell yummy. Pour your almonds in the food processer and start to process. You will need to process for 8 to 10 minutes and stop several times to scrape down the sides, so be patient. Stage 1 Stage 2- Powder Stage 3-The natural oil starts to come out and its starts to ball up. Stage 4-Almost there, just a f...
