Pumpkin Time

This weather sure does put me in the mood for some Fall favorites. I couldn’t wait go open a can of pumpkin puree. There are so many things to do with it.

I decided to make a pumpkin favorite, Pumpkin Latte! This is actually my first time to attempt it. I normally am just satisfied with a Starbucks Pumpkin Latte, but this time I wanted to find a way to make it at home and possibly make a healthier version of it. I think I succeeded! The first latte was not the best but the 2nd one was perfect!

I started out brewing some strong coffee. Make it stronger than what you would normally drink. Put about 2 tablespoons per cup.

While that is brewing make your pumpkin milk. Pull out all of your ingredients.

Make sure you put a heaping portion of pumpkin into your milk.

Mix all of your ingredients together over the stove top until warm.

Pour coffee in your cup then fill up the rest with your pumpkin milk.

You can top it with whip cream or I topped mine off with whipped almond milk. I added 1 tablespoon of sugar and 1 tablespoon of pumpkin puree and whipped for about 5 min with the hand mixer.

Soba Lo Mein

Is everyone ready for all the snow they say we are going to get tomorrow?  I hope this is the last of it. I’m ready for Spring! Flowers, bike riding, and walks in the park! Tonight I decided to use the Soba noodles I bought back when I couldn’t eat gluten. Soba noodles are made with 100% buckwheat flour and are gluten free. I’ve never tried them but I thought they would taste more like whole wheat noodles which I love. I decided to use my Chicken Lo Mein recipe without the chicken and with Soba instead of whole wheat. They didn’t taste quite like whole wheat noodles. They had the same texture but a really odd after taste. I think I stick to whole wheat from now on. You can make this Lo Mein with whatever noodles you prefer. The peanut sauce mixed with the soy sauce is so good!! I used the following ingredients.   I started out by sautéing some onions and a garlic clove in 2 tablespoons of toasted Asian sesame dressing. While you are cooking your noodles add in the ve...

I love Almond Butter

Hello again! It’s been a busy day for me today but it’s been a good food day. ;) The blender worked out a little better for me this morning. I guess it just needed a little using before I got used to it. I started today with an Energy Smoothie. It was really good. It was my first time trying the spice Cardamom. Energy Smoothie ½ C Almond Butter 1 Teaspoon Ground Cardamom 1 ½ C water 1 C Frozen Peaches 1 to 2 Teaspoons of Agave ½ C Ice I cut this recipe in half. The Cardamom was pretty noticeable. It’s hard to describe but it was a little like cinnamon. I loved the Almond butter. I tried a new brand this time. It was very creaming right out of the refrigerator. I drank most of the smoothie on my way to work. I was pretty hungry when I woke up this morning.  Lacey enjoyed the Mango Smoothe today. Isn't she cute! I had a cup of hot green tea about 8:30. It hit the spot! The smoothie held me over till about 11. When lunch time came around I was hungry. I had to take a quick lunch...

Chili For a Chilly Day

Burrrr it’s cold tonight! It seems like I was cold all day until I had a warm bowl of chili. Nothing can warm you up better! We had more snow today! I can’t believe all this snow that we’ve been getting. I love how pretty it is but I don’t like how everything just shuts down. I went to the grocery store this afternoon and it was a nightmare. I got all the things I needed and stood in line for about 10 min until realized that the hamburger meat I had in my buggy had a big tear in it. I had to go get another one and get in the back of the line. I just read about all the magazines they had standing in line. Did you know that Charlie Sheen is in rehab? And Justin Beiber is taking over the world?  This is not any kind of special recipe. It's the chili recipe I grew up on. It starts with a chili seasoning packet and its never the same every time I make it. Start by browning your meat. Try to get very lean meat so you don’t’ have to drain it. Chop and dice a 1/2 of an onion and  s...
