Fall is Here and So Is Taco Soup

This week seems to be going by fast. I’m really looking forward to this weekend. I feel like I’ve been so busy lately that I haven’t had a weekend to just sleep in and get some rest. Since Fall is here, I’m pulling out all the yummy cold weather recipes. I can’t believe we are almost in October.  I made a batch of Taco Soup and ate on it a few nights this week.

I’m also very excited to use up my canned tomatoes that we spend canning this summer.

This soup is so easy to make and taste even better for leftovers. Look at those tomatoes!

I love to dress mine with a little plain greek yogurt, shredded cheese and a few tortilla chips. If you’ve never tried greek yogurt in place of sour cream, you should. You won’t even notice the difference.

I’ve even started getting my Fall decorations out. I love decorating for the holidays. How cute is my pumpkin?

Soba Lo Mein

Is everyone ready for all the snow they say we are going to get tomorrow?  I hope this is the last of it. I’m ready for Spring! Flowers, bike riding, and walks in the park! Tonight I decided to use the Soba noodles I bought back when I couldn’t eat gluten. Soba noodles are made with 100% buckwheat flour and are gluten free. I’ve never tried them but I thought they would taste more like whole wheat noodles which I love. I decided to use my Chicken Lo Mein recipe without the chicken and with Soba instead of whole wheat. They didn’t taste quite like whole wheat noodles. They had the same texture but a really odd after taste. I think I stick to whole wheat from now on. I love Almond Butter

Hello again! It’s been a busy day for me today but it’s been a good food day. ;) The blender worked out a little better for me this morning. I guess it just needed a little using before I got used to it. I started today with an Energy Smoothie. It was really good. It was my first time trying the spice Cardamom. Energy Smoothie ½ C Almond Butter 1 Teaspoon Ground Cardamom 1 ½ C water 1 C Frozen Peaches 1 to 2 Teaspoons of Agave ½ C Ice I cut this recipe in half. The Cardamom was pretty noticeable. It’s hard to describe but it was a little like cinnamon. I loved the Almond butter. I tried a new brand this time. It was very creaming right out of the refrigerator. I drank most of the smoothie on my way to work. I was pretty hungry when I woke up this morning.  Lacey enjoyed the Mango Smoothe today. Isn't she cute! I had a cup of hot green tea about 8:30. Chili For a Chilly Day

Burrrr it’s cold tonight! It seems like I was cold all day until I had a warm bowl of chili. Nothing can warm you up better! We had more snow today! I can’t believe all this snow that we’ve been getting. I love how pretty it is but I don’t like how everything just shuts down. I went to the grocery store this afternoon and it was a nightmare. I got all the things I needed and stood in line for about 10 min until realized that the hamburger meat I had in my buggy had a big tear in it. I had to go get another one and get in the back of the line. I just read about all the magazines they had standing in line. Did you know that Charlie Sheen is in rehab?And Justin Beiber is taking over the world?  This is not any kind of special recipe. It's the chili recipe I grew up on.
