Lemon Herb Chicken

I hope everything is well with you. I wanted to share a really yummy recipe with you. I love chicken and I’m always trying to find different ways to cook it. This was super easy and was made with a few things I already had on hand.

I started out with 2 chicken breast and cut them down the middle. You could actually use 4 chicken breast for this recipe but I was only cooking for Kyle and I so I just used 2.

Place in a greased baking dish and season with salt and pepper.

Chop up 4 garlic cloves and sauté in 1/4 cup of olive oil. You will only need to sauté for about a minute.

Once your garlic has sautéed for 1 minute turn the heat off and add your herbs, lemon juice, and white wine and stir.

Pour the mixture over your chicken. Also cut up 1 lemon and place around chicken.

Bake at 425 for 40 minutes.

I served it with a side of baked sweet potatoes!

Lemon Herb Chicken

4 chicken breast

Salt and pepper

1 Lemon sliced in 6 wedges

1/4 Cup of olive oil

4 cloves- minced

1/3 Cup of white wine

Lemon zest

2 Tbs of fresh lemon juice

1 1/2 tsp dried Oregano

1 tsp Ground Thyme

Preheat oven to 425. Grease a large baking dish. Place chicken breast in dish and season with salt an pepper. Sauté garlic in 1/4 cup of olive oil for 1 minute. Turn heat off and add the herbs, lemon juice and wine. Pour over chicken breast to make sure everything is coated. Place lemon wedges around chicken. Bake for 40 min.

Day 1–Have a Headache Already

Happy New Year to everyone! Day 1 of the detox started today. It’s been pretty tough,I’m not gonna lie. Vanilla Bean Almond Butter

I don’t know about you but I LOVE nut butters. I have never made my own because I didn’t realize out easy it was. I’m telling ya, everyone can make nut butter as long as you have a decent food processor and there's not turning back. I’ve had some left over vanilla beans from the vanilla I made a while back and wanted to use them, so I decided to use them in the almond butter. I made this about a week ago and it’s already half gone! It’s like a yummy creamy dessert. Once you try fresh pure nut butters you will never go back to store bought. Only 3 ingredients and no added oils! So here it goes: Start out by toasting your almonds until they start to smell yummy. Pour your almonds in the food processer and start to process. You will need to process for 8 to 10 minutes and stop several times to scrape down the sides, so be patient. Year 2 of Detox

Well it’s that time of year again. Last year I decided to do a month long detox starting January 1st. I felt great afterwards and after how I’ve been eating recently I’ve decided to make it a tradition to do it every year. I feel it just puts me on the right track to start out the year. I know when some of you hear the word “detox” you think water and pepper for 5 days straight (or something crazy like that). This is nothing like that. I actually follow a plan that I think is very healthy. Every year Whole Living puts out a new plan. It has changed a little since last year. I think it’s a little easier to follow this year.
