Best Quesadillas You Will Ever Have!

Well, I’m officially moved! I’m so happy this is over with. Kyle and I both hate to move and he had to help. ;) He didn’t complain too much though.

I made dinner the other night and decided to make these quesadillas. I used a new kind of cheese.  I’ve never had Gruyere cheese before but am always up for trying new kinds. Our Kroger has a cheese bar and they always have free samples. YUM!

It kind of reminds me of Parmesan

Shred your cheese and chop your veggies.

Sauté your veggies in olive oil

Add sherry and sauté for 30 seconds

Fill your tortillas and toast in skillet

These were delicious! I have to say one of the best quesadillas I’ve ever made!

1 teaspoon olive oil

1 cup mushrooms

1/2 cup thinly sliced onion

1 teaspoon minced garlic

1 tablespoon sherry

flour tortillas

1 cup of shredded chicken

1 cup arugula`1/2 cup(2 oz) shredded Gruyere cheese

1. Heat a large nonstick skillet over medium- high heat. Add olive oil to pan. Add shrooms, onions, garlic and season with salt and pepper. Sauté for about 5 min. Add sherry and cook for another 30 seconds to 1 min.

2. Arrange half of mushroom mixture over half of each tortilla. Top each tortilla with 1/2 cup chicken, 1/2 cup arugula, and 1/4 cup cheese; fold over.

3. Wipe pan clean with paper towel. Heat pan over medium heat. Coat pan with cooking spray. Add tortillas to pan. Cook about 2 min or each side or until crisp.

  1. Yummy! quesadillas! I love how you showed that they dont have to be the old cheddar cheese and chicken stand by. Mix up the the cheese and other filling.

Day 1–Have a Headache Already

Happy New Year to everyone! Day 1 of the detox started today. It’s been pretty tough,I’m not gonna lie. Vanilla Bean Almond Butter

I don’t know about you but I LOVE nut butters. I have never made my own because I didn’t realize out easy it was. I’m telling ya, everyone can make nut butter as long as you have a decent food processor and there's not turning back. I’ve had some left over vanilla beans from the vanilla I made a while back and wanted to use them, so I decided to use them in the almond butter. I made this about a week ago and it’s already half gone! It’s like a yummy creamy dessert. Once you try fresh pure nut butters you will never go back to store bought. Only 3 ingredients and no added oils! So here it goes: Start out by toasting your almonds until they start to smell yummy. Pour your almonds in the food processer and start to process. You will need to process for 8 to 10 minutes and stop several times to scrape down the sides, so be patient. 2011 AR Cornbread Festival

Saturday was the 2011 Arkansas Cornbread Festival in Little Rock. I entered the competition thinking it would be a fun activity to participate in; I had no idea how big of a festival it was going to be. The number of attendents kept increasing which made me more nervous as the competition neared.  The last count I had heard was 1000 people and  I thought, how am I’m going to fix enough cornbread for that many people?  I knew that they would only be getting a 2 oz sample cup but still, that's a lot of people. I spent Friday afternoon and evening baking cornbread. They suggested that we make 4 13x9 in square inch pans worth of cornbread, I ended up shooting for 5 just to be safe.  My cornbread was called Citrus Corny Cornbread.
