Mom’s Are The Best

As some of you may know I’ve been down for the past couple days. I had a bicycle wreck Saturday and have been pretty banged up. I have such loving friends and family and don’t know what I would do without them. My mom came and spent the day with me on Saturday! She did what moms do and tried to be as helpful as she could. She decided to make me dinner. I had some ground beef from the locally grown market that needed to be cooked. You see I normally pick up my food at the locally grown market on Saturday before twelve. I had the wreck about 11 and was more worried about not getting my veggies than I was about getting to the doctor. LOL You see how important food is to me. I had Kyle go pick it up for my while a friend took me to the emergency room. Kyle made it there before twelve and came straight to the hospital. The frozen meat sat in the car and de-thawed so it needed to be cooked in the next few days. Long story short, she made meat balls!! I told her that  I was planning on making

Grilling With Friends

I don’t get to spend enough time with these girls. Last night my friend Brittany invited me and a few other girls over for some dinner. We all have been friends since high school and we just don’t get to spend enough time together. Can you believe we’ve been out of high school for 10 years now! I just can’t get over how fast it went. We’ve been through a lot these past 10 years. Amanda, ME, Carie, Jessica, Brittany Brittany decided to make Shrimp on the Barbie. I picked up some fresh corn at the farmers market Saturday to bring over. We also had salad, watermelon, and raspberry bars! I came a little early to prep the corn and stick it on the grill.     Brittany and I don’t usually cook on the grill a lot because our men usually do it. Who Likes Zucchini?

I don’t know about you but I love zucchini and squash in the Summer. I thought why not have zucchini and squash for dinner! I told Kyle what we were having and he said “where’s the meat?” I told him there wouldn’t be any meat in this meal. He wasn’t too sure about that. I decided to make zucchini cakes! I found a similar recipe in one of our nutrition magazines at work. They turned out soooo good. I did skip one step that I don’t think I will skip next time. I decided to skip the step to pat dry the zucchs to save time. They were a little soggy in the middle and I think drying them would fix this. Shred your Zucchs in food processer. I really need a bigger one. I had to do a couple batches to get the full 2 cups. Mix ingredients and form into 8 patties. Sauté in skillet until brown on both sides. I also make some spaghetti squash on the side. I sautéed some onions in olive oil and added them to the squash for a little more flavor. I seasoned it with salt and pepper. This meal was
