Back To The Basics

Tonight I made a dish that I learned in Foods and Clothing in High School. I love my recipe book from high school! I still make a lot of the recipes  in the book. Some of the recipes include; Red Lobster biscuits, fruit pizza, chocolate pie, and quiche. Any of you high school friends still have it? Of course I had to put a little Ramona healthy twist to it Brown your turkey sausage and onions. Put your meat to the side and sauté your potatoes. Meanwhile whip together your eggs and low fat half and half Place potatoes into bottom of greased dish. Spread sausage on top then pour egg mixture over it. Served with a side of fruit! Brunch Pie 1 lb Turkey Sausage 1/2 Cup Onion, chopped 12 oz Hash Browns, thawed 8 Eggs 6 oz Low Fat Half and Half Salt and Pepper to taste Preheat oven to 350. Brown the sausage with the chopped onion. Break up the sausage while cooking. Once it’s browned transfer it to bowl. Add a little olive oil to your skillet and cook your hash browns

Pecan Parmesan Tilapia

  I made this dish this weekend and it will defiantly make the recipe book. I found it off of kraftfoods.com and tweaked it just a little. It turned out so yummy and it’s so easy to make plus I served it with kale chips.  Let me show you… Start by chopping your parsley and juicing your limes Mix together toasted pecans, parmesan cheese, lime juice and olive oil. Spread on top of your fish. Bake for 10 to 12 min.   Kale chips! These are so easy and you can get anyone to eat them. Even if they don’t like green veggies. Wash and dry your kale. Place on a cookie sheet and sprinkle with salt and parmesan cheese. Bake at 350 for about 10 min or until crispy. These are very easy to burn so watch them closely. I served the fish on top of brown rice cooked in chicken broth for some added flavor. Spinach Mushroom and Ham Quiche on Wheat Crust

  Tonight I was wanting to fix something good by using the ingredients that I already had in the kitchen. How many times do we do that?   Unfortunately I wasn’t able to do it with the ingredients I had. I was in the middle of chopping all the veggies and noticed that my onion had gone bad. So I had to make a quick trip to Walmart. Good thing it’s just down the street!   I decide to go with an easy wheat crust that my lovely coworker Lacey gave me. It just has a few ingredients and its easy and healthy. Here are the ingredients Notice the  garlic grape seed oil? I love every opportunity to use this. I pick this up back when Kyle and I visited the wineries in Altus.  I use it sparingly because it’s very strong but it adds so much flavor!   Mix together all your crust ingredients and shape in pie dish It’s not going to look very pretty because it’s very crumbly.  This was the best I could do.
