Homemade Goodness

Today has been a pretty productive day. I’ve done lots of cooking and cleaning.  It started with a cup of hot, Tazo green tea.

I decided to make a bowl of oatmeal for breakfast to start the day off.  I cooked 2 cups of Bob’s Red Mill rolled oats.


And came out with this:

This bowl consisted of:
Oats
Almond Milk
Chia seeds cooked in the mix
Peaches
Justin’s Chocolate Hazelnut Butter
I picked up a sample of this nut butter at the store. I really liked it. I love the hazelnut/chocolate flavor. I will pick some up next time I’m at Whole Foods.
For lunch, Kyle and I were hungry for pizza!! We started out by cooking some chicken, bell peppers, mushrooms, garlic, and onions. We used gluten free Ezekiel tortillas for the crust.

We slapped some tomato sauce on the tortillas topped with veggies, chicken and a little cheese. They turned out really good! Kyle even liked it.

We were invited over to a friend’s house for dinner tonight. They’re making hamburgers and brats. I decided to bring over a turkey burger for me to eat and made up some homemade pita bread and hummus. It’s been awhile since I’ve made pita bread and I was looking forward to smelling it in the oven.



Pita Bread
3 cups of flour (I used whole wheat)
1 ½ teaspoon of salt
1 T sugar or honey (I used agave)
1 Packet of Yeast
1 ¼ to 1 ½ C water
2 Tablespoons of olive oil
Activate the yeast. Mix the yeast in with flour, salt and sugar. Add olive oil and 1 ¼ cup of water. Stir with wooden spoon. It should form a ball. Place ball on work surface and knead the dough for 10 min. When done, place it in a bowl that has been lightly coated with olive oil. Cover with damp kitchen towel and set aside for 2 hours. Punch the dough down to release. Divide into 8 pieces. Roll each ball. Cover with damp towel and sit for 20 min. Preheat oven to 500 degrees. Roll dough out. Place on cooking sheet. Bake 2 to 5 min.
They turned out yummy!

I also made some hummus.
5 cloves garlic
2 C chick peas
1 tsp sea salt
1/3 C tahini
3 lemons, freshly squeezed
1 T olive oil
 ½ C fresh cilantro Chopped
¼ tsp Cayenne pepper
½ tsp pepper

Day 1–Have a Headache Already

Happy New Year to everyone! Day 1 of the detox started today. It’s been pretty tough,I’m not gonna lie. I went to Whole Foods and Walmart yesterday to get all the fruits and vegetables I needed for the week. I’ve had a headache all day due to the lack of caffeine. Vanilla Bean Almond Butter

I don’t know about you but I LOVE nut butters. I have never made my own because I didn’t realize out easy it was. I’m telling ya, everyone can make nut butter as long as you have a decent food processor and there's not turning back. I’ve had some left over vanilla beans from the vanilla I made a while back and wanted to use them, so I decided to use them in the almond butter. I made this about a week ago and it’s already half gone! It’s like a yummy creamy dessert. Once you try fresh pure nut butters you will never go back to store bought. Only 3 ingredients and no added oils! So here it goes: Start out by toasting your almonds until they start to smell yummy. Pour your almonds in the food processer and start to process. You will need to process for 8 to 10 minutes and stop several times to scrape down the sides, so be patient. Italian Sausage and Tortellini Soup

Today was a great day! I didn’t have to work and I got to spend it with Kyle!! He is leaving tonight to go to Colorado to ski with the boys. I’m excited that he is getting to finally go skiing. He hasn’t been in a few years and has been itching to go. I relaxed, cooked, ate, and got my oil changed. Good day! I’ve been wanting to make some pancakes with whole grain oats so I thought I would experiment a little. I started with Bob’s Mill whole grain pancake mix. I added egg+ vanilla coconut milk+ oats+ chia seeds. Topped with Almond butter and frozen strawberries nooked in the microwave!  I love to add chia seeds to my oatmeal and anything I can add them to.
